This morning was cold and rainy again, so I decided to make us a breakfast with tropical flavours:
These are the Coconut Pancakes with Pineapple Sauce from Vegan with a Vengeance. They were a fun and tasty change on the plain pancakes we usually have (the Perfect Pancakes from Vegan Brunch are my favourite!), although I think the can of pineapple I used was too large because this made a LOT of sauce (more than twice the amount shown in the picture.) Not a problem, of course – leftovers all went into the freezer. If I made it again I’d probably keep the sauce simpler, though, as the added sugar and vanilla were just distracting from the yummy pineapple flavour, in my opinion. Still, we both thought this was a really yummy and filling breakfast.
For dinner, we had fennel soup and sandwiches. Perfect cold weather comfort food!
