Cowboy Cookies

These are probably my favourite cookies from Vegan Cookies Invade Your Cookie Jar. I’ve made them several times already, but somehow I’d never posted a picture until now. I adore them, and even though I’d love to try new recipes from VCIYCJ, I keep turning back to the Cowboy Cookies! They’re packed with oats, coconut, chocolate, and pecans, and that makes them an awesome decadent snack that somehow still feels kind of wholesome. I took the cookies to a family gathering once and they got excellent reviews, so I’m definitely going to keep baking these tasty little treats!

Vegan cookies invade my cookie jar

Not that I have a cookie jar. I should go and find one! Or just continue doing what I do now, which is eating/sharing as many cookies as I can, so I don’t have to store them. Anyway, I tried three new recipes from VCIYCJ and they turned out perfect!

Deluxe Cocoa Brownies

To celebrate the fact that I finally got myself two packages of silken tofu, I made the Deluxe Cocoa Brownies. I usually make the brownie recipe from Vive le Vegan!, which is delicious and fudgy, but I really like having a recipe that’s a bit cakier, too. I might try baking them for a little bit shorter next time, though, because I expect the VCIYCJ brownies will be awesome with a little fudginess, too.

Call Me Blondies

Since the package of silken tofu was now opened, I decided to make the Call Me Blondies, too. So good!

Lavender Shortbread

And last but not least: Lavender Shortbread! I made this for my Mum, who had her birthday on Monday. My dough was not crumbly as the recipe described, but more soft and pliable. Still, it turned out even better than I’d expected! It’s nice and light with its subtle lavender flavour and delicious crumbly texture. Very yummy.

I keep forgetting to upload my pictures, so I’m a little behind on posting stuff on here. But I had lunch at a little vegetarian restaurant today, which was fun! I’ll post pictures later. Have a nice evening!

Hello! Very quick post because, well, I have to go to sleep.

Happy holidays, everyone! I meant to post this earlier, but apparently my internet connection sucks right now. These are the cookies I baked yesterday:

Cinnamon Twist

Cinnamon twist cookies, adapted from this recipe. I’d made them before with soy yoghurt as an egg replacer, and that worked well. This time I decided to use a mixture of coconut milk and sunflower oil for the liquid ingredients, and they’re delicious as well! They’re a lot of fun to make and they taste wonderfully light and cinnamon-y.

Sablés Marbrés

Sablés Marbrés from 500 Vegan Recipes. They’re so much fun to make, they look pretty, and they’re absolutely delicious! Mihl recommended them to me after I asked for cookie ideas in my previous post, and I’m really glad I ended up trying this recipe.

Chocolate Chip Cookies

Lastly, I made half a batch of the chocolate chip cookies from Vegan Cookies Invade Your Cookie Jar. I had made the recipe from the blog a couple of times before, so I already knew these would be a success. Yum!

I actually made more cookies, but these are just the ones I managed to photograph before it got too dark. Luckily, these also happen to be my favourites! I took a big plate of cookies over to my boyfriend’s house where I’m celebrating Christmas, and especially the sablés marbrés were a real success. I also had a lovely dinner with my boyfriend and his parents, and I even got a couple of presents! Those consisted of a new aluminium mini muffin tin, a new vegan cookbook (Nonna’s Italian Kitchen!), and various wonderfully scented vegan shower products. So exciting!
