<p><span style="font-size:small;">Really though, I prefer spring as a time to celebrate a new year anyway. It’s just much easier to get excited about new beginnings when there’s actual sunshine and blue skies and budding trees to feel inspired by. And dandelions. I’m really loving all the dandelions this year.</span></p>
<p><span style="font-size:small;">Spring is also the time when I start to feel motivated about food and cooking again. Our kitchen can get pretty cold in the winter and after long months of wanting to wrap myself in every blanket I could find before even thinking about going in there it feels amazing to be able to leave the balcony door open and cook barefoot.</span></p>
<p><span style="font-size:small;">Though I&#8217;m happy to celebrate a new year, for some reason the idea of New Year’s resolutions never really appealed to me. I guess I thought of them as unpleasant things people create to make themselves do things they’re not really that excited by, but of course they don’t have to be like that at all. This year I thought it would be fun to make a list of foods I’d been wanting to try for a while but somehow hadn’t gotten around to making myself. Some of these I’ve tried at restaurants, others I’ve never even tasted, but they’re all foods I really look forward to trying at some point this year. <p><span style="font-size:small;">I included a few foods that I’m slightly intimidated by (such as stuffed artichokes and baguettes) and I’m sure not all of these will turn out well on the first try (I already pulled my first batch of disappointing croissants out of the oven yesterday afternoon), but I have to say, I love having this list of delicious meals (and desserts!) to look forward to!</span></p>
<p><span style="font-size:small;">By the way, the chocolate cake at the top of this post is a version of <a href="http://wherestherevolution.blogspot.nl/2007/10/ode-to-wacky-cake.html">this Wacky Cake recipe</a> from <em>Where&#8217;s the Revolution?</em> which I absolutely love. It uses such simple ingredients that most people probably have on hand, but I love the flavour and texture and to me this is just the perfect chocolate cake. This time I made it with spelt flour and I always like to add a little extra cocoa powder and a few drops of almond extract as well.</span></p>

<p><span style="font-size:small;">First of all: good news, my oven&#8217;s working again! Thankfully, the problem was pretty easy to solve so now I can bake again. Before it was fixed, though, I still spent the morning making a few recipes to freeze for later that don&#8217;t require an oven, and this stack of <a href="http://www.theppk.com/2010/11/carrot-cake-pancakes/">carrot cake pancakes</a> was one of them. I&#8217;ve been following the PPK blog for years but whenever I browse the recipe section I always find a few new things I still want to try. I really love these pancakes &#8211; they&#8217;re pretty healthy for a sweet breakfast (well, they have a vegetable! I also used some whole wheat flour) and the flavours are lovely as well. I didn&#8217;t have maple syrup (I used a little brown sugar in the pancakes, instead) but they were great even on their own or with a little vegan butter. I just love the combination of carrots and spices, especially this time of year. Come to think of it, I don&#8217;t think I&#8217;ve ever tried an actual carrot cake! I may have to bake one soon&#8230;<br />

<p><span style="font-size:small;">While looking for waffle recipes through <a href="http://vegblogsearch.com/">Vegblogsearch</a>, I came across this recipe on Vegansaurus titled <a href="http://vegansaurus.com/post/19340078696">&#8216;the greatest vegan waffle recipe in the world&#8217;</a>, so of course I had to try it! I got up early this morning to do some sleepy VeganMoFo cooking so I loved that the recipe specifies an extra quick &amp; reckless method to making the batter for those with little time or patience. The waffle recipe itself is very simple and quick, as well, and while I&#8217;m not sure these were the best waffles I&#8217;ve ever had, they were certainly delicious, and I&#8217;d love to make the recipe again with some add-ins such as fruits or spices. For now, we had a few of these with raspberry jam and froze the rest for later. It&#8217;s a great feeling to know that there&#8217;s a bag of waffles in the freezer ready to be toasted for quick happy waffle breakfasts whenever we like!</span></p>

<p><span style="font-size:small;">I make tofu scramble all the time, but this recipe from <a href="http://magicjelly.com.au/blog/2011/08/vegan-breakfast-scramble/">Magic Jelly</a> uses a technique I hadn&#8217;t tried before: Karena fries the tofu in some oil or margarine as you normally would, but then she adds a chickpea flour batter to coat the tofu and to add a different texture to the scramble. I really love this idea, though I was clearly a little too tired when I made it this morning &#8211; I spilled chickpea flour and nutritional yeast all over the floor and probably messed up the measurements in the recipe as a result. Oops. I also forgot to pick up spring onions so I used some finely chopped yellow onion instead. It was still good, though, and I&#8217;m definitely going to use this technique again! I used dried dill this time but I&#8217;d love to try it with other (fresh) herbs as well.</span></p>

I found the tempeh recipe <a href="http://vegetus.nl/andijviestampot-met-pittige-tempeh-blokjes/">here on Vegetus</a>, a Dutch website with lots of recipes and helpful tips on vegan cooking in the Netherlands. I love tempeh bacon (especially the one from Vegan Brunch) and I make it every once in a while by steaming, marinating, and frying slices of tempeh, but that can be a little time-consuming. This recipe is much less elaborate (just mix the tempeh and marinade in a frying pan and cook until browned!) but the result still tastes great. I just love smoked paprika. The tempeh went really well with the kale &amp; potato mash and I also loved the leftover cubes in a sandwich the next day.</span></p>
