Chop suey with tofu and spring rolls

Effing delicious! All the time that I’ve been vegan (which is, I guess, not that long) it never occurred to me that the people at the Chinese takeout in my village would probably know how to handle tofu. And their mini spring rolls are vegan too. Yum!
I could make a really fabulous post about my holiday in Crete last week and all the wonderful food I found there, but I don’t have the time right now, so that’s coming up later.
